Abstract (EN)
Films made from pure pectin with the addition of citrus pectin (PC) and curdlan gum (CG) showed a (WVTR) value of 12.33 ± 2.84 [g/m2d]. The addition of extract resulted in a decrease in the value of the WVTR parameter and therefore an increase in the barrier properties of the films obtained. At the highest extract concentration, TS and EAB values of 22.50 [MPa] and 43.06 [%], respectively, were observed. Experiments evaluating the antioxidant activity of the films (DPPH, ABTS and Cu2⁺ chelation) indicated that their antioxidant potential increased with extract concentration. Furthermore, the obtained films showed activity against E.coli. With an increase in the concentration of the extract in the film tested, an increase in the growth inhibition efficiency of this microorganism was observed. Therefore, it can be assumed that films containing the highest concentration of Rumex hydrolapathum extract can be effective in inhibiting lipid peroxidation and vitamin oxidation in food products, as well as effectively inhibiting the growth of E.coli.
